Green curry with kiwi and coriander

Ingredients

2 onions
100 g of cooking resistant potatoes
150 g of cabbage
2 tablespoons of peanut oil
2 tablespoons of green curry paste
3 dl of vegetable broth
2.5 dl of coconut milk
6 kiwis
soy sauce
2 sprigs of cilantro
Preparation: approx. 30 minutes

How to proceed
Coarsely chop the onions. Peel the potatoes and cut them into approx. 1 cm thick. Remove the leaves from the cabbage head and cut them into strips.
Heat the oil in a wok or in a large pan. Brown the onions and potatoes. Incorporate the curry into the paste and briefly brown everything. Turn off with the broth and add the coconut milk. Cook for approx. 15 minutes until the potatoes are almost boiled. Add the cabbage strips and cook them al dente for approx. 5 minutes.
Meanwhile, peel the kiwis and cut them into cubes. Add them to the curry just before it is ready and briefly heat everything. Dress with the soy sauce and serve with the coriander leaves.
